I went with tombstone date.

Note the collection of 1810-1830 census records do not jive well with the children list derived from the estate notices. I have assumed the estate notice children list correct and the census records skewed by children possibly living with relatives at various times. Supporting a large virutally all girl family may have necessitated some children living with relatives.
Also note the estate record states Martin is the eldest son and eleven children were alive when Peter died. But if 11 where alive when Peter died and Martin is the eldest son, does that mean John died between Peters death and the filing of probate documents?

8 Jan 1832 a York Co. land warrant was accepted by Peter Stephy in Manheim. No way to tell which Peter this was (i.e. this Peter or a grandson of Peter (1708-1776)).

Pennsylvania, Tax and Exoneration, 1768-1801 contains records for Michael Steffy and George Steffy (sons of Peter Steffy and Anna Maria Werner) as well as widow Steffy (which I assumed is Anna Maria Werner). None were found for a Peter Steffy. He could have been with mother or brothers. His children were baptized at Sherman's (St. David's) Union Church so he must have been in the area.
